Ingredients

Scale
  • 200 g dark chocolate (60–70% cocoa)

  • 1 cup heavy whipping cream (240 ml)

  • 3 large eggs, separated

  • 1/4 cup granulated sugar (50 g)

  • 1 teaspoon vanilla extract

  • Pinch of fine sea salt


Instructions

  • Melt the dark chocolate gently until smooth and let it cool slightly.

  • Whisk egg yolks with half of the sugar until pale and creamy, then add vanilla.

  • Stir melted chocolate into the egg yolk mixture until fully combined.

  • Whip egg whites with remaining sugar until soft peaks form.

  • Whip heavy cream separately until soft peaks form.

  • Fold whipped cream into the chocolate mixture gently.

  • Fold in egg whites carefully until smooth and airy.

  • Spoon into glasses and chill for at least 2 hours before serving.
