Ingredients

200 g dark chocolate (60–70% cocoa)

1 cup heavy whipping cream (240 ml)

3 large eggs, separated

1/4 cup granulated sugar (50 g)

1 teaspoon vanilla extract

Pinch of fine sea salt
Instructions

Melt the dark chocolate gently until smooth and let it cool slightly.

Whisk egg yolks with half of the sugar until pale and creamy, then add vanilla.

Stir melted chocolate into the egg yolk mixture until fully combined.

Whip egg whites with remaining sugar until soft peaks form.

Whip heavy cream separately until soft peaks form.

Fold whipped cream into the chocolate mixture gently.
