Ingredients

1 ¾ cups (220g) all-purpose flour

1 cup (200g) granulated sugar

½ cup (100g) brown sugar

¾ cup (75g) finely ground pistachios

¾ cup (75g) chopped pistachios

¾ cup (75g) cocoa powder

2 large eggs
-
1 cup (240ml) whole milk

½ cup (120ml) neutral oil
-
1 cup (240ml) hot coffee
-
1 tsp baking powder
-
1 tsp baking soda
-
½ tsp salt
-
1 tsp vanilla extract
-
1 ½ cups chocolate ganache
Instructions

Preheat oven to 350°F (180°C) and prepare two 8 inch cake pans.

Whisk flour, cocoa, ground pistachios, baking powder, baking soda, and salt.

In a separate bowl whisk eggs, sugars, oil, milk, and vanilla.

Add dry ingredients then pour in hot coffee and mix gently.

Divide batter into pans and bake 28 to 32 minutes.

Cool cakes fully on a wire rack.

Prepare optional pistachio crunch by toasting pistachios with sugar and honey.

Spread ganache on the first layer then place the second layer on top.

Pour remaining ganache and decorate with chopped pistachios.
