Description

A rich chocolate cake with a Dubai twist. This pistachio-loaded beauty is the show-stopping dessert every chocolate lover needs.


Ingredients

Scale
  • 1 ¾ cups (220g) all-purpose flour

  • 1 cup (200g) granulated sugar

  • ½ cup (100g) brown sugar

  • ¾ cup (75g) finely ground pistachios

  • ¾ cup (75g) chopped pistachios

  • ¾ cup (75g) cocoa powder

  • 2 large eggs

  • 1 cup (240ml) whole milk

  • ½ cup (120ml) neutral oil

  • 1 cup (240ml) hot coffee

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp vanilla extract

  • 1 ½ cups chocolate ganache


Instructions

  • Preheat oven to 350°F (180°C) and prepare two 8 inch cake pans.

  • Whisk flour, cocoa, ground pistachios, baking powder, baking soda, and salt.

  • In a separate bowl whisk eggs, sugars, oil, milk, and vanilla.

  • Add dry ingredients then pour in hot coffee and mix gently.

  • Divide batter into pans and bake 28 to 32 minutes.

  • Cool cakes fully on a wire rack.

  • Prepare optional pistachio crunch by toasting pistachios with sugar and honey.

  • Spread ganache on the first layer then place the second layer on top.

  • Pour remaining ganache and decorate with chopped pistachios.
