Crispy, cheesy, and packed with spicy buffalo flavor, these quesadillas are perfect for weeknight dinners or game-day snacking.
Ingredients

2 cups cooked chicken, shredded

½ cup buffalo sauce

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas (10-inch)

2 tbsp butter, softened

½ cup diced red onions (optional)

¼ cup chopped fresh cilantro (optional)

Ranch or blue cheese dressing, for serving
Instructions

Toss shredded chicken with buffalo sauce until evenly coated.

Lay a tortilla on a flat surface, sprinkle with cheese, add buffalo chicken, and top with more cheese. Add onions or cilantro if desired.

Heat a skillet over medium heat and melt 1 tsp butter. Cook quesadilla 3–4 minutes per side until golden brown and cheese is melted.

Let rest for 1 minute, then cut into wedges. Serve with dressing.

Repeat with remaining tortillas, keeping finished quesadillas warm in a low oven.
