Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 cup shredded coconut (optional)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.
  • Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  • Beat granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  • Gradually mix dry ingredients into wet ingredients.
  • Fold in grated carrots, pineapple, and optional nuts or coconut.
  • Pour batter into pan and bake 35–40 minutes or until a toothpick comes out clean.
  • Beat cream cheese and butter, add powdered sugar and vanilla for frosting.
  • Cool cake completely, then frost evenly and sprinkle nuts or coconut if desired.
  • Slice and serve.
