Ingredients

1.5 lb boneless skinless chicken thighs, cut into bite-size pieces

1 tbsp oil

1 large onion, diced

4 cloves garlic, minced

1 tbsp grated ginger

2 tbsp curry powder

1 tsp ground turmeric

1 tsp ground cumin

1 tsp paprika

1 cup crushed tomatoes

1 cup coconut milk or heavy cream

0.5 cup chicken broth

1 tsp salt

0.5 tsp black pepper

Fresh cilantro, chopped
Instructions

Heat oil in a skillet over medium heat and sauté the onion until soft.

Add garlic and ginger and cook until fragrant.

Stir in curry powder, turmeric, cumin, and paprika and toast for 30 seconds.

Add chicken and cook until lightly browned.

Pour in crushed tomatoes and chicken broth and stir well.
