Description

Crispy chicken, gooey cheese, and rich marinara come together in this Easy Chicken Parmesan. Perfect for a quick weeknight dinner that tastes like a restaurant favorite.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lb.)

  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 1/2 cups Italian-style breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp dried Italian herbs

  • Salt and pepper, to taste

  • 1/4 cup olive oil or vegetable oil

  • 2 cups marinara sauce

  • 1 1/2 cups shredded mozzarella cheese

  • 2 tbsp chopped fresh basil, optional


Instructions

  • Pat chicken dry, season with salt, pepper, and garlic powder, and flatten to 1/2-inch thickness.

  • Dredge chicken in flour, dip in egg, coat with breadcrumb mixture, then repeat egg and breadcrumb step.

  • Heat oil over medium-high heat and fry chicken 3-4 minutes per side until golden brown; drain on paper towels.

  • Preheat oven to 400°F (200°C). Place chicken in a baking dish, spoon marinara over each, and top with mozzarella. Bake 15-20 minutes until cheese melts.

  • Garnish with basil and serve immediately over pasta, salad, or roasted vegetables.
