Ingredients

4 boneless, skinless chicken breasts (about 1 lb.)

1 cup all-purpose flour

2 large eggs, beaten

1 1/2 cups Italian-style breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp dried Italian herbs

Salt and pepper, to taste

1/4 cup olive oil or vegetable oil

2 cups marinara sauce

1 1/2 cups shredded mozzarella cheese

2 tbsp chopped fresh basil, optional
Instructions

Pat chicken dry, season with salt, pepper, and garlic powder, and flatten to 1/2-inch thickness.

Dredge chicken in flour, dip in egg, coat with breadcrumb mixture, then repeat egg and breadcrumb step.

Heat oil over medium-high heat and fry chicken 3-4 minutes per side until golden brown; drain on paper towels.

Preheat oven to 400°F (200°C). Place chicken in a baking dish, spoon marinara over each, and top with mozzarella. Bake 15-20 minutes until cheese melts.

Garnish with basil and serve immediately over pasta, salad, or roasted vegetables.
