Ingredients

  • 12 oz (340 g) linguine

  • 1 lb (450 g) chicken breast, sliced

  • ½ cup (113 g) unsalted butter

  • 1 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp smoked paprika

  • ½ tsp red pepper flakes

  • 1 tbsp chopped parsley

  • 1 tbsp chopped chives

  • Salt and black pepper, to taste

  • ½ cup (120 ml) reserved pasta water

  • Optional: grated Parmesan, crispy bacon


Instructions

  • Cook linguine in salted water until al dente, reserving ½ cup pasta water.

  • Heat olive oil and cook sliced chicken until golden and done.

  • Melt butter in the same skillet and add garlic, mustard, lemon juice, paprika, red pepper flakes, parsley, and chives.

  • Return chicken to the skillet and toss in cowboy butter.

  • Add cooked linguine and pasta water, tossing until the sauce coats the pasta.

  • Taste, adjust seasoning, and serve with Parmesan or bacon if desired.
