Ingredients

  • 10 oz fresh spinach, chopped

  • 7 oz feta cheese, crumbled

  • 4 large eggs

  • 1 cup whole milk or half-and-half

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon nutmeg


Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.

  2. Sauté onion in olive oil until soft, then add garlic and cook briefly.

  3. Add spinach and cook until just wilted, then remove from heat.

  4. Whisk eggs, milk, salt, pepper, oregano, and nutmeg in a bowl.

  5. Stir spinach mixture and feta into the egg mixture.

  6. Pour into baking dish and spread evenly.

  7. Bake for 35 to 40 minutes until set and lightly golden.

  8. Rest for 10 minutes before slicing and serving.
