- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 2 teaspoons fresh rosemary, chopped
- 2 cans white beans, drained and rinsed
- 4 cups vegetable broth
- 1 cup water
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon lemon juice
- 2 cups baby spinach or kale
- 2 tablespoons grated Parmesan (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot, and celery, then cook until softened.
- Stir in garlic and rosemary, and cook until fragrant.
- Add white beans, broth, water, salt, and pepper.
- Simmer for 15 to 20 minutes.
- Mash part of the beans to thicken the soup.
- Stir in spinach or kale and cook until wilted.
- Finish with lemon juice and adjust seasoning.
- Serve hot with bread and optional Parmesan
