Ingredients

  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 teaspoons fresh rosemary, chopped
  • 2 cans white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup water
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 2 cups baby spinach or kale
  • 2 tablespoons grated Parmesan (optional)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrot, and celery, then cook until softened.
  • Stir in garlic and rosemary, and cook until fragrant.
  • Add white beans, broth, water, salt, and pepper.
  • Simmer for 15 to 20 minutes.
  • Mash part of the beans to thicken the soup.
  • Stir in spinach or kale and cook until wilted.
  • Finish with lemon juice and adjust seasoning.
  • Serve hot with bread and optional Parmesan
