Instructions

  • Preheat oven to 350°F (175°C) and line a 10×15-inch pan with parchment paper.

  • Whisk eggs and sugar until thick and pale, then fold in sifted flour, cocoa, baking powder, and salt.

  • Pour batter into the pan and bake 12–15 minutes until springy.

  • Invert cake onto a powdered sugar-dusted towel and roll immediately; cool completely.

  • Whip cream with powdered sugar and vanilla; fold in cherries.

  • Unroll cake, spread filling evenly, and re-roll gently.

  • Dust with cocoa powder, garnish with cherries, and chill 1 hour before slicing.
