Ingredients

  • 2 medium sweet potatoes, peeled and diced

  • 1 tbsp olive oil

  • 1/2 tsp ground cinnamon

  • 1/4 tsp sea salt

  • 2 large eggs or 1/2 cup Greek yogurt

  • 1/2 cup fresh berries

  • 2 tbsp chopped nuts

  • 1 tbsp chia seeds

  • 1 tbsp maple syrup, optional

  • 2 tbsp nut butter


Instructions

  • Preheat oven to 425°F and line a baking sheet with parchment paper.

  • Toss diced sweet potatoes with olive oil, cinnamon, and salt. Spread evenly on baking sheet.

  • Roast for 25 to 30 minutes, flipping halfway, until tender and golden.

  • Cook eggs to preference or prepare yogurt topping.

  • Assemble bowls with roasted sweet potatoes, protein, and desired toppings. Serve warm.
