Ingredients

1 lb. ground beef or sausage, cooked and drained

4 medium potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers, diced

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup milk

2 tbsp butter

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 cup fresh parsley, chopped
Instructions

Peel and dice potatoes, chop onions and bell peppers, and mince garlic. Preheat oven to 375°F (190°C).

Cook ground beef or sausage over medium heat until browned; drain excess fat. Add onions, garlic, and bell peppers; sauté until tender. Season with salt, pepper, and smoked paprika.

In a bowl, combine sour cream, milk, and half of the cheddar cheese.

Grease a 9×13-inch baking dish. Layer half of the diced potatoes, then the meat and vegetables. Pour creamy mixture on top and sprinkle remaining cheese.

Cover with foil and bake 25 minutes. Remove foil and bake 20 more minutes until golden and bubbly.

Let stand 5–10 minutes, garnish with parsley, and serve.
Notes
.You can prep this casserole the night before and refrigerate to bake fresh in the morning.
Feel free to swap ham with cooked sausage or bacon, or use a vegetarian alternative.
For a spicier version, mix in chopped jalapeños or pepper jack cheese.
