Ingredients

Scale
  • 1 sheet puff pastry (about 250 g / 9 oz)

  • 6–8 fresh figs, sliced

  • 150 g brie cheese, sliced

  • ¾ cup ricotta cheese

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1 teaspoon fresh thyme leaves

  • 1 teaspoon lemon zest

  • ¼ teaspoon sea salt

  • ¼ teaspoon black pepper

  • 1 tablespoon chopped walnuts or pistachios (optional)

  • 1 egg, beaten (for egg wash)

  • 1 tablespoon balsamic glaze

Instructions

  • Roll the puff pastry slightly and place it on the baking sheet. Score a 1-inch border around the edges.

  • Mix ricotta cheese, lemon zest, salt, pepper, and half of the thyme in a bowl. Spread over the pastry inside the border.

  • Arrange sliced brie over the ricotta layer. Place sliced figs evenly on top.

  • Brush the pastry edges with beaten egg and drizzle olive oil over the figs.

  • Bake for 20–25 minutes until the pastry turns golden and the cheese melts.
