Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup whole milk

2 tbsp fresh lemon juice

1 tbsp lemon zest

1 ½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

1 tsp vanilla extract

1 cup powdered sugar

2–3 tbsp lemon juice for glaze
Instructions

Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.

Cream butter and sugar until pale and fluffy.

Beat in eggs one at a time, then add lemon juice, zest, and vanilla.

Whisk flour, baking powder, baking soda, and salt in a separate bowl.

Add half the dry ingredients to the butter mixture, then the milk, then the remaining dry mixture. Fold gently.

Pour into pan and bake 28–34 minutes.

Cool 10 minutes, then drizzle with glaze.
