Ingredients

Scale
  • 1 ½ cups all-purpose flour

  • 1 cup granulated sugar

  • ½ cup unsalted butter, softened

  • 2 large eggs

  • ½ cup whole milk

  • 2 tbsp fresh lemon juice

  • 1 tbsp lemon zest

  • 1 ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • 1 cup powdered sugar

  • 23 tbsp lemon juice for glaze


Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.

  • Cream butter and sugar until pale and fluffy.

  • Beat in eggs one at a time, then add lemon juice, zest, and vanilla.

  • Whisk flour, baking powder, baking soda, and salt in a separate bowl.

  • Add half the dry ingredients to the butter mixture, then the milk, then the remaining dry mixture. Fold gently.

  • Pour into pan and bake 28–34 minutes.

  • Cool 10 minutes, then drizzle with glaze.
