Ingredients

  • 1 whole duck (about 4–5 lbs / 1.8–2.3 kg), cleaned and patted dry

  • 1/2 cup soy sauce (120 ml)

  • 2 tablespoons hoisin sauce (30 ml)

  • 2 tablespoons honey (30 ml)

  • 2 teaspoons ground cinnamon (4 g)

  • 4 cloves garlic, minced (12 g)

  • 1-inch piece of fresh ginger, grated (10 g)

  • 1 teaspoon five-spice powder (2 g)

  • 1 tablespoon sesame oil (15 ml)

  • 2 green onions, chopped (20 g)

  • 1/2 teaspoon black pepper (1 g)

  • 1/2 cup water (120 ml)


Instructions

  • Prepare the marinade by mixing soy sauce, hoisin sauce, honey, cinnamon, garlic, ginger, five-spice powder, sesame oil, and black pepper.

  • Rub the marinade all over the duck and refrigerate for 2–3 hours or overnight.

  • Preheat the oven to 425°F (220°C) and let the duck sit at room temperature for 20–30 minutes.

  • Roast the duck at high heat for 20 minutes to crisp the skin, basting occasionally.

  • Reduce the oven to 350°F (175°C) and continue roasting for 60–75 minutes, basting every 20 minutes.

  • Remove from oven and rest the duck for 15–20 minutes.

  • Make the pan sauce by simmering drippings with 1/2 cup water for 5–7 minutes.

  • Carve the duck, drizzle with the pan sauce, garnish with green onions, and serve immediately.
