Ingredients

1 whole duck (about 4–5 lbs / 1.8–2.3 kg), cleaned and patted dry

1/2 cup soy sauce (120 ml)

2 tablespoons hoisin sauce (30 ml)

2 tablespoons honey (30 ml)

2 teaspoons ground cinnamon (4 g)

4 cloves garlic, minced (12 g)

1-inch piece of fresh ginger, grated (10 g)

1 teaspoon five-spice powder (2 g)

1 tablespoon sesame oil (15 ml)

2 green onions, chopped (20 g)

1/2 teaspoon black pepper (1 g)

1/2 cup water (120 ml)
Instructions

Prepare the marinade by mixing soy sauce, hoisin sauce, honey, cinnamon, garlic, ginger, five-spice powder, sesame oil, and black pepper.

Rub the marinade all over the duck and refrigerate for 2–3 hours or overnight.

Preheat the oven to 425°F (220°C) and let the duck sit at room temperature for 20–30 minutes.

Roast the duck at high heat for 20 minutes to crisp the skin, basting occasionally.

Reduce the oven to 350°F (175°C) and continue roasting for 60–75 minutes, basting every 20 minutes.

Remove from oven and rest the duck for 15–20 minutes.

Make the pan sauce by simmering drippings with 1/2 cup water for 5–7 minutes.

Carve the duck, drizzle with the pan sauce, garnish with green onions, and serve immediately.
