Ingredients

Scale
  • 1½ lbs sirloin steak, cut into 1-inch cubes

  • 1½ lbs baby Yukon Gold potatoes, halved

  • 4 tbsp unsalted butter

  • 1 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • ½ tsp smoked paprika

  • 1 tbsp fresh parsley, chopped

Instructions

  • Cut steak into cubes and pat dry. Season with salt, pepper, thyme, and paprika.

  • Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook until golden and fork-tender, about 15 minutes. Remove and set aside.

  • Increase heat to high. Add steak in a single layer and sear 2 minutes per side until browned.

  • Reduce heat to medium. Add butter and garlic, stirring until fragrant and steak is coated.
