Ingredients

1½ lbs sirloin steak, cut into 1-inch cubes

1½ lbs baby Yukon Gold potatoes, halved

4 tbsp unsalted butter

1 tbsp olive oil

4 cloves garlic, minced

1 tsp kosher salt

½ tsp black pepper

1 tsp dried thyme

½ tsp smoked paprika

1 tbsp fresh parsley, chopped
Instructions

Cut steak into cubes and pat dry. Season with salt, pepper, thyme, and paprika.

Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook until golden and fork-tender, about 15 minutes. Remove and set aside.

Increase heat to high. Add steak in a single layer and sear 2 minutes per side until browned.

Reduce heat to medium. Add butter and garlic, stirring until fragrant and steak is coated.

Return potatoes to the skillet and toss to combine. Garnish with parsley and serve immediately.
