  • 4 tbsp unsalted butter, softened

  • 4 garlic cloves, minced

  • 1 tbsp fresh rosemary, finely chopped

  • 1 tbsp fresh thyme, finely chopped

  • 1 tsp salt, or to taste

  • 1 tsp black pepper, freshly ground

  • 2 tbsp olive oil

  • Optional: 1 tsp Dijon mustard

  • Optional: ½ tsp smoked paprika


Instructions

  • Preheat oven to 425°F (220°C) and pat the beef dry.

  • Combine butter, garlic, rosemary, thyme, salt, and pepper in a bowl.

  • Rub olive oil over the beef, then coat with the herb butter mixture.

  • Sear beef on all sides in a hot skillet for 2–3 minutes per side.

  • Roast in oven for 20–30 minutes, checking internal temperature.

  • Remove roast and tent with foil for 10–15 minutes to rest.

  • Slice against the grain and serve with pan juices or preferred sides.
