3–4 lb. beef tenderloin roast, trimmed

4 tbsp unsalted butter, softened

4 garlic cloves, minced

1 tbsp fresh rosemary, finely chopped

1 tbsp fresh thyme, finely chopped

1 tsp salt, or to taste

1 tsp black pepper, freshly ground

2 tbsp olive oil

Optional: 1 tsp Dijon mustard

Optional: ½ tsp smoked paprika
Instructions

Preheat oven to 425°F (220°C) and pat the beef dry.

Combine butter, garlic, rosemary, thyme, salt, and pepper in a bowl.

Rub olive oil over the beef, then coat with the herb butter mixture.

Sear beef on all sides in a hot skillet for 2–3 minutes per side.

Roast in oven for 20–30 minutes, checking internal temperature.
