Ingredients

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon baking powder

  • 2 tablespoons olive oil


Instructions

  • Grate zucchini, sprinkle lightly with salt, and let sit for 10 minutes.

  • Squeeze zucchini firmly in a clean towel to remove excess moisture.

  • Mix zucchini with eggs, garlic, Parmesan, herbs, salt, pepper, and baking powder.

  • Stir in flour until a thick batter forms.

  • Heat olive oil in a skillet over medium heat.

  • Scoop batter into the pan and flatten slightly.
