Ingredients

  • 1 whole chicken (33.5 lb / 1.31.6 kg), cut into pieces

  • 10 cups water

  • 2 tbsp olive oil

  • 1 large onion, diced

  • 3 large carrots, sliced

  • 3 celery stalks, sliced

  • 4 cloves garlic, minced

  • 2 bay leaves

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup egg noodles

  • Lemon juice (optional)

  • Fresh dill or parsley for garnish


Instructions

  1. Heat olive oil and sauté onion, carrots, and celery until lightly golden.

  2. Add garlic, herbs, salt, and pepper, stirring to release aroma.

  3. Place chicken in the pot and pour in water. Bring to a boil and skim foam.

  4. Reduce heat and simmer for 60–70 minutes.

  5. Remove chicken, shred it, and set aside.

  6. Bring broth to a gentle boil and add noodles. Cook 8–10 minutes.

  7. Return shredded chicken to the pot and adjust seasoning.

  8. Serve warm with fresh dill or parsley.
