3 lbs bone-in chicken pieces

2 cups buttermilk

1 large egg

1 tbsp hot sauce

2 1/2 cups all-purpose flour

1/2 cup cornstarch

1 tbsp paprika

2 tsp garlic powder

2 tsp onion powder

1 tsp cayenne pepper

1 tsp white pepper

1 tsp black pepper

1 tsp dried thyme

1 tsp dried oregano

1 tbsp salt

Vegetable oil for frying
Instructions

Whisk buttermilk, egg, hot sauce, and salt in a bowl. Add chicken and marinate at least 8 hours.

Combine flour, cornstarch, and spices in another bowl.

Dredge chicken in flour mixture, dip back in marinade, then dredge again.

Heat oil to 335°F.

Fry chicken 12–15 minutes until golden and internal temperature reaches 165°F.
