Ingredients

  • 1 tablespoon olive oil

  • 1 large onion, finely diced

  • 1 lb. cremini or white mushrooms, sliced

  • 2 teaspoons Hungarian sweet paprika

  • 1 teaspoon dried dill or 1 tablespoon fresh dill

  • 2 tablespoons all-purpose flour

  • 4 cups vegetable broth

  • 1 cup whole milk

  • 1/2 cup sour cream

  • 1 tablespoon soy sauce or tamari

  • Salt and black pepper to taste

  • Fresh parsley or dill for garnish


Instructions

  • Melt butter and olive oil in a large pot over medium heat, then cook onion until soft and translucent.

  • Add mushrooms and cook until they release moisture and begin to brown.

  • Lower heat and stir in paprika and dill until fragrant.

  • Sprinkle flour over the mixture and cook briefly while stirring.

  • Slowly add vegetable broth, stirring constantly, and simmer until slightly thickened.

  • Stir in milk and soy sauce, then add tempered sour cream.

  • Simmer gently, adjust seasoning, garnish, and serve hot.
