Ingredients

  • 200g chocolate biscuits, crushed

  • 4 tbsp unsalted butter, melted

  • 250g cream cheese, softened

  • 100g powdered sugar

  • 150ml Baileys Irish Cream

  • 300ml double cream

  • 100g dark chocolate, melted

  • 1 tsp vanilla extract

  • 50g milk chocolate, grated

  • Fresh raspberries or strawberries (optional, for topping)


Instructions

  • Combine crushed chocolate biscuits and melted butter, press into the bottom of a trifle dish, and chill for 10–15 minutes.

  • Beat cream cheese with powdered sugar and vanilla extract until smooth, then gradually mix in Baileys Irish Cream.

  • Whip double cream to soft peaks and fold into the cheesecake mixture.

  • Layer half the cheesecake mixture over the biscuit base, drizzle half the melted dark chocolate, then repeat with remaining cheesecake and chocolate.

  • Refrigerate for 2–3 hours, then garnish with grated milk chocolate and fresh berries.
