Ingredients

200g chocolate biscuits, crushed

4 tbsp unsalted butter, melted

250g cream cheese, softened

100g powdered sugar

150ml Baileys Irish Cream

300ml double cream

100g dark chocolate, melted

1 tsp vanilla extract

50g milk chocolate, grated

Instructions

Combine crushed chocolate biscuits and melted butter, press into the bottom of a trifle dish, and chill for 10–15 minutes.

Beat cream cheese with powdered sugar and vanilla extract until smooth, then gradually mix in Baileys Irish Cream.

Whip double cream to soft peaks and fold into the cheesecake mixture.

Layer half the cheesecake mixture over the biscuit base, drizzle half the melted dark chocolate, then repeat with remaining cheesecake and chocolate.
