Ingredients

  • 1 cup full-fat coconut milk

  • 1/2 cup unsweetened almond milk

  • 3 tablespoons chia seeds

  • 1 cup fresh mango, diced

  • 1–2 tablespoons maple syrup or honey

  • 1/2 teaspoon vanilla extract

  • Pinch of sea salt


Instructions

  • Peel and dice the mango, blending half until smooth if desired.

  • Whisk coconut milk, almond milk, maple syrup, vanilla, and salt in a bowl or jar.

  • Add chia seeds and whisk thoroughly, then stir again after five minutes.

  • Fold in blended mango or layer it separately.

  • Cover and refrigerate for at least 4 hours or overnight until thickened.

  • Stir before serving and add toppings as desired
