Ingredients

1 cup full-fat coconut milk

1/2 cup unsweetened almond milk

3 tablespoons chia seeds

1 cup fresh mango, diced

1–2 tablespoons maple syrup or honey

1/2 teaspoon vanilla extract

Pinch of sea salt
Instructions

Peel and dice the mango, blending half until smooth if desired.

Whisk coconut milk, almond milk, maple syrup, vanilla, and salt in a bowl or jar.

Add chia seeds and whisk thoroughly, then stir again after five minutes.

Fold in blended mango or layer it separately.

Cover and refrigerate for at least 4 hours or overnight until thickened.
