Ingredients

  • 2 lbs. frozen hash brown potatoes, thawed

  • 1 cup unsalted butter, melted

  • 1 cup sour cream, full-fat

  • 1 can (10.5 oz) cream of chicken soup

  • 2 cups shredded sharp cheddar cheese

  • 1/2 cup diced onions

  • 1 tsp garlic powder

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika

  • 2 cups crushed cornflakes or potato chips

  • 2 tbsp melted butter for topping

  • Optional: 1/4 cup chopped fresh parsley


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  • In a large bowl, combine hash browns, melted butter, sour cream, cream of chicken soup, onions, garlic powder, black pepper, and smoked paprika.

  • Fold in 1 1/2 cups shredded cheddar cheese.

  • Spread mixture evenly into prepared baking dish.

  • Combine crushed cornflakes with 2 tbsp melted butter. Sprinkle remaining 1/2 cup cheese over potatoes, then top with buttery cornflakes.

  • Bake uncovered for 45-50 minutes until bubbly and golden brown. Broil 2-3 minutes for extra crispiness.

  • Let rest 5 minutes, garnish with parsley, and serve warm.
