Ingredients

  • ¼ teaspoon salt

  • ½ cup unsalted butter, softened

  • 2½ cups powdered sugar

  • 2 tablespoons lime juice for frosting


Instructions

  • Preheat oven to 350°F and line a muffin pan with paper liners.

  • Whisk flour, baking powder, baking soda, and salt in a bowl.

  • In another bowl, mix sugar, oil, eggs, pickle juice, lime zest, and lime juice.

  • Combine wet and dry ingredients gently until just mixed.

  • Divide batter into liners and bake for 18 to 20 minutes.

  • Cool completely on a wire rack.

  • Beat butter, powdered sugar, lime juice, and salt until fluffy.
