Ingredients

12 egg roll wrappers

4 oz. cream cheese, softened

1 cup shredded sharp cheddar cheese

2 fresh jalapenos, finely diced

2 green onions, thinly sliced

2 strips cooked bacon, crumbled (optional)

1 tsp garlic powder
-
1/2 tsp smoked paprika

1/4 tsp black pepper
-
1 egg, beaten

Vegetable oil, for frying
Instructions

Combine cream cheese, cheddar, jalapenos, green onions, bacon, garlic powder, smoked paprika, and black pepper in a bowl.

Lay an egg roll wrapper in a diamond shape and place 2 tablespoons of filling in the center. Fold bottom corner over filling, fold in sides, roll tightly, and seal with beaten egg.

Heat vegetable oil to 350°F (175°C) in a skillet or fryer.

Fry egg rolls 2–3 minutes per side until golden brown and crispy, then drain on paper towels.

Serve immediately with ranch, spicy aioli, or sweet chili sauce.
