Ingredients

  • 2 large ripe mangoes, peeled and diced

  • 1 cup diced cucumber

  • 1 red bell pepper, finely chopped

  • 1/4 cup thinly sliced red onion

  • 1/4 cup chopped fresh cilantro

  • 1/4 cup freshly squeezed lime juice

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon honey or maple syrup

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper

  • Optional: 1 small jalapeño, finely diced


Instructions

  • Peel and cube the mangoes into bite-sized pieces and place them in a large bowl.

  • Dice the cucumber, chop the bell pepper, and slice the red onion. Add to the bowl.

  • Whisk lime juice, olive oil, honey, salt, and pepper in a small bowl until combined.

  • Pour dressing over the salad and add cilantro. Toss gently to coat evenly.

  • Chill for 10–15 minutes before serving for best flavor.
