2 large ripe mangoes, peeled and diced

1 cup diced cucumber

1 tablespoon extra virgin olive oil

Instructions

Peel and cube the mangoes into bite-sized pieces and place them in a large bowl.

Dice the cucumber, chop the bell pepper, and slice the red onion. Add to the bowl.

Whisk lime juice, olive oil, honey, salt, and pepper in a small bowl until combined.
