Ingredients

  • 100 g almond flour

  • 100 g powdered sugar

  • 70 g egg whites, room temperature

  • 75 g granulated sugar

  • 1/4 tsp cream of tartar

  • Green gel food coloring

  • 60 g unsalted butter, softened

  • 120 g powdered sugar

  • 2 tbsp key lime juice

  • 1 tsp key lime zest

  • 1/2 tsp vanilla extract


Instructions

  1. Line baking sheets with parchment paper and prepare a piping bag.

  2. Sift almond flour and powdered sugar together.

  3. Whip egg whites until foamy, then add sugar and whip to stiff peaks.

  4. Fold dry ingredients into meringue until batter flows smoothly.

  5. Pipe circles, rest until dry, and bake at 300°F for 14 to 16 minutes.

  6. Beat butter, powdered sugar, lime juice, zest, and vanilla for filling.

  7. Sandwich cooled shells with filling and chill before serving.
