- 1 cup unsalted butter
- 1 ¾ cups granulated sugar
- 4 large eggs
- 1 tablespoon lemon zest
- ¼ cup lemon juice
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1 ½ cups blueberries
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice
Instructions
- Preheat oven to 350°F and grease a bundt pan.
- Whisk flour, baking powder, baking soda, and salt.
- Beat butter and sugar until fluffy.
- Add eggs one at a time, then mix in lemon zest, juice, and vanilla.
- Alternate dry ingredients with yogurt and mix gently.
- Fold in blueberries.
- Pour into pan and bake for 50–60 minutes.
- Cool, remove from pan, and let cool completely.
- Mix glaze and drizzle over cake.
