Ingredients

  • 1 cup unsalted butter, softened

  • ¾ cup granulated sugar

  • ¼ cup powdered sugar

  • 2 large eggs, at room temperature

  • ½ cup freshly squeezed lemon juice

  • 1 tbsp lemon zest

  • 1 tsp pure vanilla extract

  • 1 cup all-purpose flour

  • ¼ tsp salt

  • Optional: powdered sugar for garnish


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.

  2. Beat butter, granulated sugar, and powdered sugar until pale and fluffy.

  3. Add eggs one at a time, then mix in lemon juice, lemon zest, and vanilla extract.

  4. Sift flour and salt, fold gently into wet ingredients until combined.

  5. Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes until a toothpick comes out clean.

  6. Cool completely, lift from pan, cut into squares, and optionally dust with powdered sugar.
