Description

Ingredients

  • 2 ¼ cups (270 g) all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ¾ cup (170 g) unsalted butter, softened

  • 1 cup (200 g) granulated sugar

  • 1 large egg

  • 2 tablespoons lemon zest

  • 3 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • 1 cup (130 g) dried cranberries

  • Optional: ¼ cup (50 g) white chocolate chips


Instructions

  1. Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.

  2. Cream butter and sugar until light and fluffy then mix in the egg, lemon zest, lemon juice, and vanilla.

  3. Whisk together flour, baking soda, and salt then add to the wet mixture and stir gently.

  4. Fold in dried cranberries and optional white chocolate chips.

  5. Scoop dough into balls and place on baking sheets.

  6. Bake 10–12 minutes until edges are golden and centers soft.

  7. Cool on a wire rack before serving.
