Ingredients

300 g sponge cake or ladyfingers, cut into chunks

1 cup lemon curd

2 large ripe mangoes, peeled and diced

4 passionfruit, pulp scooped out

2 cups heavy whipping cream

3 tablespoons powdered sugar

1 teaspoon vanilla extract

1 cup chilled custard or vanilla pudding

2 tablespoons lemon juice

2 tablespoons sugar
Instructions

Mix lemon juice and sugar until dissolved and lightly drizzle over sponge pieces.

Whip cream with powdered sugar and vanilla until soft peaks form.

Layer sponge pieces in the bottom of a trifle bowl or glasses.

Spread lemon curd, then custard over the sponge.

Add diced mango and spoon passionfruit pulp on top.

Cover with a layer of whipped cream.

Repeat layers, finishing with whipped cream and passionfruit.
