Description

This lemon poppy seed cake is soft, bright, and bakery good without the fuss. One bite and you will want to bake it again and again.


Ingredients

  • 1 tablespoon poppy seeds

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup granulated sugar

  • 1/2 cup unsalted butter, softened

  • 2 large eggs

  • 1/2 cup plain yogurt or sour cream

  • Zest of 2 lemons

  • 1/4 cup fresh lemon juice

  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F and prepare a loaf or round cake pan with parchment paper.

  2. Whisk flour, poppy seeds, baking powder, baking soda, and salt in a bowl.

  3. Beat butter and sugar until light and fluffy, then add eggs one at a time.

  4. Mix in yogurt, lemon zest, lemon juice, and vanilla until combined.

  5. Gently fold dry ingredients into the batter until just mixed.

  6. Pour batter into pan and smooth the top.

  7. Bake for 45 to 55 minutes until a toothpick comes out with moist crumbs.
