Ingredients

1 cup dried brown or green lentils, rinsed

2 tbsp olive oil

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 garlic cloves, minced

1 tsp ground cumin

1/2 tsp smoked paprika

1/4 tsp black pepper

1/2 tsp salt

6 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes, with juice

2 bay leaves

2 cups fresh spinach, roughly chopped

Juice of 1 lemon

Fresh parsley, chopped
Instructions

Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until tender. Add garlic, cumin, smoked paprika, black pepper, and salt; cook 1 minute.

Add lentils, broth, diced tomatoes, and bay leaves. Bring to a boil, then reduce heat and simmer 25-30 minutes until lentils are tender.

Remove bay leaves. Stir in spinach until wilted, then add lemon juice. Adjust seasoning.
