Ingredients

  • 1 cup dried brown or green lentils, rinsed

  • 2 tbsp olive oil

  • 1 medium onion, finely chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 garlic cloves, minced

  • 1 tsp ground cumin

  • 1/2 tsp smoked paprika

  • 1/4 tsp black pepper

  • 1/2 tsp salt

  • 6 cups vegetable or chicken broth

  • 1 can (14 oz) diced tomatoes, with juice

  • 2 bay leaves

  • 2 cups fresh spinach, roughly chopped

  • Juice of 1 lemon

  • Fresh parsley, chopped


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until tender. Add garlic, cumin, smoked paprika, black pepper, and salt; cook 1 minute.

  • Add lentils, broth, diced tomatoes, and bay leaves. Bring to a boil, then reduce heat and simmer 25-30 minutes until lentils are tender.

  • Remove bay leaves. Stir in spinach until wilted, then add lemon juice. Adjust seasoning.

  • Serve hot, garnished with parsley.
