Ingredients

  • 2 ripe mangoes, diced
  • 1 large cucumber, sliced
  • 1 cup fresh blueberries
  • 1 ripe avocado, diced
  • 1/4 small red onion, thinly sliced
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 2 tbsp fresh mint or cilantro
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Dice the mangoes, slice the cucumber, rinse blueberries, and cube the avocado.
  • Thinly slice the red onion and chop fresh herbs.
  • In a small bowl, whisk lime juice, olive oil, honey, salt, and pepper.
  • Combine mango, cucumber, blueberries, and onion in a large bowl.
  • Pour dressing over the mixture and toss gently.
  • Add avocado and fold carefully to avoid mashing.
  • Garnish with herbs and serve immediately or chilled.
