- 2 ripe mangoes, diced
- 1 large cucumber, sliced
- 1 cup fresh blueberries
- 1 ripe avocado, diced
- 1/4 small red onion, thinly sliced
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tbsp honey or maple syrup
- 2 tbsp fresh mint or cilantro
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Dice the mangoes, slice the cucumber, rinse blueberries, and cube the avocado.
- Thinly slice the red onion and chop fresh herbs.
- In a small bowl, whisk lime juice, olive oil, honey, salt, and pepper.
- Combine mango, cucumber, blueberries, and onion in a large bowl.
- Pour dressing over the mixture and toss gently.
- Add avocado and fold carefully to avoid mashing.
- Garnish with herbs and serve immediately or chilled.
