Ingredients

  • 1/2 cup vegetable oil

  • 1 cup granulated sugar

  • 1 cup pumpkin puree

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3/4 cup unsalted butter, softened

  • 2 1/2 cups powdered sugar

  • 3 tablespoons pure maple syrup

  • 1 teaspoon vanilla extract


Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.

  • Whisk together flour, baking powder, baking soda, spices, and salt.

  • Mix oil and sugar, then add pumpkin, egg, and vanilla.

  • Fold dry ingredients into wet batter gently.

  • Scoop batter onto baking sheets and bake 10 to 12 minutes.

  • Cool cakes completely on a wire rack.

  • Beat butter until creamy, then add powdered sugar.

  • Mix in maple syrup and vanilla until smooth.

  • Spread filling onto half the cakes.

  • Sandwich with remaining cakes and serve.
