Ingredients

4 fillets of white fish (cod, halibut, or sea bass, about 6 oz each)

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted and sliced

1 small red onion, thinly sliced

2 tablespoons capers, drained

1 teaspoon dried oregano
-
1 teaspoon dried thyme

Zest and juice of 1 lemon

Salt and black pepper, to taste

¼ cup fresh parsley, chopped

Optional: ½ teaspoon red pepper flakes
Instructions

Preheat oven to 400°F (200°C) and lightly oil a baking dish.

Toss cherry tomatoes, onion, olives, and capers with olive oil, oregano, thyme, salt, and pepper.

Pat fish dry and rub with olive oil, minced garlic, lemon zest, salt, and pepper.

Place fish in baking dish and spread vegetable mixture on top and around the fillets.

Bake 12–15 minutes until fish flakes easily; broil 2–3 minutes for a golden top if desired.

Sprinkle with chopped parsley and drizzle with lemon juice before serving.
