Ingredients

  • 4 fillets of white fish (cod, halibut, or sea bass, about 6 oz each)

  • 2 tablespoons extra virgin olive oil

  • 3 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • ½ cup Kalamata olives, pitted and sliced

  • 1 small red onion, thinly sliced

  • 2 tablespoons capers, drained

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Zest and juice of 1 lemon

  • Salt and black pepper, to taste

  • ¼ cup fresh parsley, chopped

  • Optional: ½ teaspoon red pepper flakes


Instructions

  • Preheat oven to 400°F (200°C) and lightly oil a baking dish.

  • Toss cherry tomatoes, onion, olives, and capers with olive oil, oregano, thyme, salt, and pepper.

  • Pat fish dry and rub with olive oil, minced garlic, lemon zest, salt, and pepper.

  • Place fish in baking dish and spread vegetable mixture on top and around the fillets.

  • Bake 12–15 minutes until fish flakes easily; broil 2–3 minutes for a golden top if desired.

  • Sprinkle with chopped parsley and drizzle with lemon juice before serving.
