Description

Creamy, nutty, and naturally sweet, this healthy Mediterranean pistachio and honey ice cream tastes like a summer vacation in every scoop. Light, wholesome, and irresistibly smooth.


Ingredients

Scale
  • 1 cup raw unsalted pistachios, shelled

  • 2 cups full-fat Greek yogurt

  • 1 cup unsweetened almond milk

  • 1/3 cup raw honey

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon fine sea salt

  • 1 tablespoon extra virgin olive oil (optional)


Instructions

  • Toast pistachios at 325°F for 6 to 8 minutes until fragrant, then cool completely.

  • Blend pistachios until smooth and paste-like.

  • Add yogurt, almond milk, honey, vanilla, salt, and olive oil, then blend until creamy.

  • Chill mixture in refrigerator for at least 2 hours.

  • Churn in ice cream maker for 20 to 25 minutes until soft-serve consistency.

  • Transfer to freezer-safe container and freeze 2 to 3 hours until firm.

  • Let sit 5 minutes before scooping and serve.
