1 lb. flank or sirloin steak, trimmed and sliced

2 tbsp olive oil, divided

1 tsp garlic powder

1 tsp smoked paprika

1 cup cooked quinoa or couscous

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup red onion, thinly sliced

½ cup kalamata olives, pitted and halved

¼ cup crumbled feta cheese

2 tbsp fresh parsley, chopped

½ cup tzatziki sauce for drizzling

1 lemon, cut into wedges for serving
Instructions

Pat steak dry and season with garlic powder, smoked paprika, salt, and pepper. Sear in hot skillet 3–4 minutes per side for medium-rare. Let rest before slicing.

Cook quinoa or couscous according to package instructions, fluff with fork, and drizzle with olive oil.

Toss cherry tomatoes, cucumber, and red onion with olive oil, salt, and pepper. Roast tomatoes at 400°F for 10 minutes if desired.
