Ingredients

  • 1 lb. flank or sirloin steak, trimmed and sliced

  • 2 tbsp olive oil, divided

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • 1 cup cooked quinoa or couscous

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • ½ cup red onion, thinly sliced

  • ½ cup kalamata olives, pitted and halved

  • ¼ cup crumbled feta cheese

  • 2 tbsp fresh parsley, chopped

  • ½ cup tzatziki sauce for drizzling

  • 1 lemon, cut into wedges for serving


Instructions

  • Pat steak dry and season with garlic powder, smoked paprika, salt, and pepper. Sear in hot skillet 3–4 minutes per side for medium-rare. Let rest before slicing.

  • Cook quinoa or couscous according to package instructions, fluff with fork, and drizzle with olive oil.

  • Toss cherry tomatoes, cucumber, and red onion with olive oil, salt, and pepper. Roast tomatoes at 400°F for 10 minutes if desired.

  • Layer grains in bowls, top with sliced steak, vegetables, olives, and feta. Drizzle with tzatziki and garnish with parsley and lemon.

  • Serve immediately with pita or salad and enjoy.
