Ingredients

1 cup (240 g) overripe bananas, mashed

½ cup (115 g) unsalted butter, softened

¾ cup (150 g) brown sugar, packed

2 large eggs, at room temperature

1 tsp vanilla extract

1 ½ cups (190 g) all-purpose flour

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup (150 g) mincemeat

½ cup (60 g) chopped walnuts or pecans (optional)

¼ cup (60 ml) milk
Instructions

Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

Mash bananas in a bowl until smooth.

Cream butter and brown sugar until fluffy.

Add eggs one at a time, then stir in vanilla and mashed bananas.

Whisk flour, baking soda, salt, cinnamon, and nutmeg in a separate bowl.

Gradually fold dry ingredients into the wet mixture.

Gently fold in mincemeat and optional nuts.

Pour batter into prepared loaf pan and smooth the top.

Bake 55–65 minutes until a toothpick comes out clean. Rotate halfway for even baking.
