Ingredients

  • 3 large ripe bananas
  • 2 large eggs
  • 1/3 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1/4 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1/2 cup oat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 3/4 cup dark chocolate chips
  • 1 tbsp milk (optional)

Instructions

  • Preheat oven to 350°F and prepare a loaf pan.
  • Mash bananas in a large bowl until smooth.
  • Whisk in eggs, oil, honey, yogurt, and vanilla.
  • Fold in flour, oat flour, baking soda, baking powder, cinnamon, and salt.
  • Stir in chocolate chips.
  • Pour batter into loaf pan and top with extra chocolate chips.
  • Bake for 50 to 60 minutes.
  • Cool for 10 minutes before slicing.
