Ingredients

  • 1 ¾ cups granulated sugar

  • 4 large eggs

  • 2 ½ cups all-purpose flour

  • ½ teaspoon salt

  • ½ teaspoon baking powder

  • ½ cup whole milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon lemon zest

  • 1 ½ cups fresh strawberries, diced


Instructions

  1. Preheat oven to 325°F and prepare a 9×5-inch loaf pan.

  2. Cream butter and sugar until pale and fluffy.

  3. Add eggs one at a time, mixing well after each.

  4. Whisk flour, salt, and baking powder separately.

  5. Alternate adding dry ingredients and milk to the batter.

  6. Stir in vanilla and lemon zest.

  7. Fold in diced strawberries gently.

  8. Pour into pan and bake 60–70 minutes until done.
