Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ½ cup vegetable oil

  • ¾ cup granulated sugar

  • ½ cup brown sugar, packed

  • 3 large eggs

  • 2 tsp vanilla extract

  • 2 cups grated zucchini

  • ½ cup chopped walnuts or pecans (optional)

  • ½ cup chocolate chips (optional)


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper. Grate zucchini and set aside. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

  • In a large bowl, combine vegetable oil, granulated sugar, and brown sugar. Beat in eggs one at a time, then add vanilla extract.

  • Gradually fold dry ingredients into the wet mixture. Add zucchini and fold gently. Fold in nuts or chocolate chips if desired.

  • Pour batter into prepared loaf pan and smooth the top. Bake for 55–65 minutes, checking with a toothpick.

  • Cool in pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
