2 cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ cup vegetable oil

¾ cup granulated sugar

½ cup brown sugar, packed

3 large eggs

2 tsp vanilla extract

2 cups grated zucchini

½ cup chopped walnuts or pecans (optional)

Instructions

Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper. Grate zucchini and set aside. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

In a large bowl, combine vegetable oil, granulated sugar, and brown sugar. Beat in eggs one at a time, then add vanilla extract.

Gradually fold dry ingredients into the wet mixture. Add zucchini and fold gently. Fold in nuts or chocolate chips if desired.

Pour batter into prepared loaf pan and smooth the top. Bake for 55–65 minutes, checking with a toothpick.
