Ingredients

  • 4 oz. bittersweet chocolate, chopped
  • 2 oz. unsalted butter, plus extra for greasing ramekins
  • 2 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp sourdough starter, active or recently fed
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: cocoa powder for dusting ramekins, whipped cream or berries for serving

Instructions

  • Preheat oven to 425°F (220°C) and grease ramekins with butter; dust with cocoa powder.
  • Melt chocolate and butter together until smooth; let cool slightly.
  • Whisk eggs and sugar until pale and thickened.
  • Fold melted chocolate, sourdough starter, and vanilla into eggs, then sift in flour and salt.
  • Divide batter evenly among ramekins, filling 3/4 full.
  • Bake 10-12 minutes until edges are set but centers jiggle slightly.
  • Let rest 1-2 minutes, run a knife around edges, invert onto plates, and serve warm with optional toppings.
