- 4 oz. bittersweet chocolate, chopped
- 2 oz. unsalted butter, plus extra for greasing ramekins
- 2 large eggs, room temperature
- 2 large egg yolks, room temperature
- 1/4 cup granulated sugar
- 2 tbsp all-purpose flour
- 2 tbsp sourdough starter, active or recently fed
- 1 tsp vanilla extract
- Pinch of salt
- Optional: cocoa powder for dusting ramekins, whipped cream or berries for serving
Instructions
- Preheat oven to 425°F (220°C) and grease ramekins with butter; dust with cocoa powder.
- Melt chocolate and butter together until smooth; let cool slightly.
- Whisk eggs and sugar until pale and thickened.
- Fold melted chocolate, sourdough starter, and vanilla into eggs, then sift in flour and salt.
- Divide batter evenly among ramekins, filling 3/4 full.
- Bake 10-12 minutes until edges are set but centers jiggle slightly.
- Let rest 1-2 minutes, run a knife around edges, invert onto plates, and serve warm with optional toppings.
