Description

Ingredients

  • 1 lb ground beef

  • 1 tablespoon olive oil

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 2 tablespoons taco seasoning

  • 2 cups beef broth

  • 1 can diced tomatoes, undrained

  • 2 cups uncooked short pasta

  • 1 cup shredded cheddar or Mexican-blend cheese

  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat and brown the ground beef, seasoning lightly with salt and pepper.

  2. Add onion and cook until softened, then stir in garlic until fragrant.

  3. Mix in taco seasoning, coating the beef evenly.

  4. Pour in beef broth and diced tomatoes and bring to a gentle simmer.

  5. Add pasta, stir well, cover, and simmer until pasta is tender.
