Orange chicken just got meal prep friendly. These bowls are bold, fresh, and make your lunches something to actually look forward to.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces

  • 2 tablespoons cornstarch

  • 2 tablespoons olive oil

  • 1 cup fresh orange juice

  • 2 tablespoons soy sauce

  • 2 tablespoons honey

  • 1 tablespoon rice vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon grated ginger

  • 1 tablespoon cornstarch mixed with 2 tablespoons water

  • 3 cups cooked jasmine rice

  • 2 cups steamed broccoli and carrots


Instructions

  1. Toss chicken pieces with cornstarch until evenly coated.

  2. Heat olive oil in a skillet and cook chicken until golden and cooked through, then remove.

  3. Sauté garlic and ginger briefly in the same pan.

  4. Add orange juice, soy sauce, honey, and vinegar, then simmer.

  5. Stir in cornstarch slurry and cook until thickened.

  6. Return chicken to the sauce and toss to coat.

  7. Assemble bowls with rice, vegetables, and orange chicken.
