Breakfast just got a serious upgrade. These Pancake Tacos are fluffy, fun, and perfect for sweet or savory cravings.


Ingredients

Scale
  • 1 ½ cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 tablespoon baking powder

  • ¼ teaspoon salt

  • 1 ¼ cups whole milk

  • 1 large egg

  • 2 tablespoons melted unsalted butter

  • ½ teaspoon vanilla extract

  • 1 cup fresh berries (optional)

  • ½ cup Greek yogurt (optional)

  • Maple syrup (optional)

  • 4 scrambled eggs (optional)

  • 4 strips cooked bacon (optional)

  • ½ cup shredded cheddar cheese (optional)


Instructions

  1. Whisk together flour, sugar, baking powder, and salt in a bowl.

  2. In another bowl, mix milk, egg, melted butter, and vanilla.

  3. Combine wet and dry ingredients, stirring gently.

  4. Heat a greased skillet over medium heat.

  5. Pour ¼ cup batter for each pancake and cook until bubbles form.

  6. Flip and cook until golden brown.

  7. Drape warm pancakes over a rolling pin to form taco shapes.

  8. Fill with sweet or savory toppings and serve warm.
