- 4 boneless, skinless chicken breasts (1.5 lbs / 680 g)
- 1 cup grated Parmesan cheese (100 g)
- 1 cup panko breadcrumbs (100 g)
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 large eggs
- 2 tablespoons milk
- 2 tablespoons olive oil or melted butter
- Optional: lemon wedges and fresh parsley
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking sheet.
- Pound chicken breasts to even thickness and pat dry.
- Mix Parmesan, breadcrumbs, garlic powder, Italian herbs, salt, and pepper in a shallow bowl. Whisk eggs with milk in another bowl.
- Dip chicken in egg mixture, then coat with Parmesan-breadcrumb mixture. Repeat for extra crunch.
- Heat oil or butter in a skillet and sear chicken 2–3 minutes per side until golden. Bake 15–20 minutes until cooked through.
- Let rest 5 minutes, garnish with parsley and lemon, and serve with preferred sides.
