Ingredients

4 large egg whites, room temperature

1 cup superfine sugar

1 teaspoon cornstarch

1 teaspoon white vinegar or lemon juice

1 teaspoon vanilla extract

1 cup heavy cream

2 tablespoons powdered sugar

Fresh fruit of choice for topping
Instructions

Preheat oven to 250°F or 120°C and line a baking sheet with parchment paper.

Beat egg whites until soft peaks form.

Gradually add sugar and beat until stiff, glossy peaks form.

Fold in cornstarch, vinegar or lemon juice, and vanilla.

Spoon meringue into nest shapes on the baking sheet.

Bake for 60 to 70 minutes until crisp on the outside.

Cool completely in the oven with the door slightly open.

Whip cream with powdered sugar and fill nests before serving.
