Description

Peach macarons that taste like summer and look straight from a French bakery. These sweet little treats are delicate, fruity, and totally worth the bake.


Ingredients

Scale
  • 100 g almond flour

  • 100 g powdered sugar

  • 70 g egg whites, room temperature

  • 90 g granulated sugar

  • Peach or orange gel food coloring

  • 1/2 cup unsalted butter, softened

  • 1 1/2 cups powdered sugar for filling

  • 1/2 cup peach puree

  • 1/2 teaspoon vanilla extract

  • Pinch of salt


Instructions

  1. Sift almond flour and powdered sugar together twice and set aside.

  2. Whip egg whites until foamy, then slowly add granulated sugar and beat to stiff peaks.

  3. Fold dry ingredients into the meringue until batter flows smoothly.

  4. Pipe batter onto lined baking sheets and tap to remove air bubbles.

  5. Rest shells until dry to the touch, then bake at 300°F for 14 to 16 minutes.

  6. Cool shells completely before filling.

  7. Beat butter, powdered sugar, peach puree, vanilla, and salt until fluffy.

  8. Pipe filling onto shells, sandwich, and refrigerate for 24 hours before serving.
